A chocolate chip cookie may quite possibly be the best thing on the planet and how do you make it even better? I am so glad you asked. It’s by adding some sweet caramel bits and salty pretzels to get the perfect sweet + salty combination. These Salty Sweet Caramel Pretzel Cookies are one of my most popular cookie recipes of all time.

Does anyone remember the old school “Parent Trap” sequel made in the 1980’s (for sure I am dating myself)? While the parents are gone, the girls take out a big bowl and started to make cookies by adding everything and anything they could get their hands on – marshmallows, chocolate, M & M’s, potato chips, etc? I would rewind that over and over and dream about reenacting that cookie experience….and basically, we are doing just that! We are doing what those smart girls did in that movie and putting delectable ingredients into already perfect chocolate chip cookies.

These Salty Sweet Chocolate Chip Caramel Pretzel Cookies have that coveted buttery, crispy edges and chewy center. You get a little crunch from the pretzels, sweetness from the caramel bits and richness from the semi-sweet chocolate.


Recipe Summary

  • 1 (12 ounce) package crispy corn and rice cereal
  • 5 ounces slivered almonds
  • 6 ounces toasted, chopped pecans
  • ¾ cup butter
  • ¾ cup dark corn syrup
  • 1 ½ cups light brown sugar

Preheat oven to 250 degrees F (120 degrees C). Lightly grease a large roasting pan.

In a large bowl, mix crispy corn and rice cereal, slivered almonds and toasted, chopped pecans.

In a medium saucepan over medium heat, melt the butter and mix with dark corn syrup and light brown sugar. Pour the mixture over the crispy corn and rice cereal mixture. Stir and shake to coat all the nuts and cereal.

Pour the coated mixture into the prepared roasting pan. Stirring approximately every 15 minutes, cook 1 hour in the preheated oven. Cool on wax paper, and store in airtight containers.

We took the taste of a classic Birthday Cake, mixed it with our yummy sweet and salty popcorn recipe and came up with a new Cake Batter Popcorn recipe is a celebration in and of itself. It would be a great addition to the dessert table at your next party or as a special treat for family movie night. Grab some sprinkles and let’s make a batch!

The base for our Cake Batter Popcorn is our Sweet and Salty Marshmallow Popcorn which is indeed sweet, salty, crunchy and oh so delicious. You can find all the detailed directions you’ll need to make this yummy popcorn right here .

You will also need some pretty Birthday Cake Sprinkles which you can find in the Baking aisle in most grocery stores.

The not-so-secret ingredient in our Cake Batter Popcorn is a box of Yellow Cake Mix.

Note about the cake mix: If you are worried about eating the raw flour in the cake mix you can bake the 1/2 cup of cake mix in a low oven for 15 minutes. Also, you will be adding the cake mix to a very hot mixture of melted marshmallows and butter so it will get slightly cooked during that process.

Melt the butter in a medium sauce pan. Add the mini marshmallows and stir until they are completely melted. Turn off the heat and add the cake mix. Stir until the completely mixed with the marshmallow mixture.

Slowly pour the marshmallow mixture over a large bowl filled with 10 cups of salted popcorn. Gently fold the marshmallow mixture in with the popcorn until the popcorn is mostly covered. The amount of marshmallow mixture you want to add is really up to your own taste. The more you add, the stickier the popcorn will be so we suggest that you add it a bit at a time, stir the popcorn and give it a taste before you add more.

Quickly add the sprinkles to the Cake Batter Popcorn and fold while the popcorn is still warm.

Now pour the Cake Batter Popcorn onto a cookie sheet covered with foil or a silpat liner. Sprinkle another handful of the Sprinkles over the popcorn. Allow the Cake Batter Popcorn to cool. Break apart into pieces and serve.

Our family loves this popcorn so it has never lasted longer than a day at our house. This popcorn definitely tastes best right after it is made but will keep for a few days in an airtight container. The popcorn is a little chewier the next day because the popcorn absorbs some of the moisture from the marshmallow mixture but it still tastes good.
